Discover Foods sells authentic-tasting Mexican, Latino and North American foods to supermarkets, restaurants and catering companies across the U.K. and increasing, all over the world. And I'm proud that our continually trying to run the business in a way that we would like to be treated ourselves - honestly, fairly, professionally and enjoyably - has earned us much commercial and personal success.

SaucesIn 1989, it all started with our recipe sauces. We discovered them in Wales. Not an obvious start point for a company professing authenticity and provenance. Our inspiration was from a wonderfully charismatic Texan chef called Marshall Young.

Too many bottled sauces that pass themselves off as authentic are really just thickened water with some tomato puree and chilli powder. Our sauces have a depth of flavour. Not to be confused with spicy hot, it is the blending of the herbs and spices in the seasonings that make the difference.

And now all our sauces have separate seasoning to the sauce. An idea inspired by a trip to New Orleans cooking with Chef Paul Prudhomme. By seasoning the meat or fish first before adding the sauce, you will deliver a depth of flavour that is unique.

Tortillas
Tortillas are the cornerstone of Mexican cooking – and like the Mexicans, WE LOVE TORTILLAS!

In all but the Northern states (where they use wheat flour), tortillas are made using Masa Harina (Corn maize flour). However, in the UK we prefer the wheat-flour tortilla. They are softer and more pliable. Gently warmed, you can wrap them around pretty much anything. From Fajitas to Enchiladas and Quesadillas, savoury or sweet, they are a store cupboard staple that you should never be without.

Accompaniments
All cuisines have their accompaniments and Mexican is no different. From jalapenos, to salsa & guacamole, the richness of choice can help turn a simple meal into a feast.

Jalapenos – probably the most widely used chilli in Mexican cooking; they add that extra kick when you need it.

Refried Beans – beans play a crucial role in the cooking of Mexico. They might not look that attractive but they taste divine and can be used in so many ways.

Salsa – Salsa goes with everything. We want our store cupboard salsa to taste as good as fresh so we’ve blended lots of zingy chunks of ripe tomato, tangy onion and hand-picked jalapenos.

Guacamole & soured cream –When it gets too hot, they are here to cool things down.
